La beguda freda de moda, el cold brew<\/strong><\/h2>\n\n\n\n

Possiblement, coneixeu aquesta nova moda que ha comen\u00e7at a escampar-se per les cafeteries m\u00e9s modernes, el cold brew coffee. Aquesta tend\u00e8ncia consisteix a extreure l’ess\u00e8ncia del caf\u00e8 a partir d’una infusi\u00f3 amb aigua<\/strong>. Per\u00f2 us preguntareu, quina \u00e9s la difer\u00e8ncia amb els altres m\u00e8todes d’extracci\u00f3 que coneixem? En aquest cas, la beguda s’obt\u00e9 per temps d’infusi\u00f3 i no per escalfor, ja que l’aigua que s’utilitza per preparar-lo es troba a temperatura ambient.<\/p>\n\n\n\n

Per aconseguir una infusi\u00f3, l’aigua calenta no \u00e9s estrictament necess\u00e0ria. A m\u00e9s temperatura, menys temps de preparaci\u00f3. Per aix\u00f2 un espresso \u00e9s la preparaci\u00f3 m\u00e9s allunyada del cold brew. Aquest proc\u00e9s d’extracci\u00f3, que podr\u00edem equiparar a la cuina a foc lent, permet degustar una beguda suau, dol\u00e7a i amb aromes molt diferents.<\/strong><\/p>\n\n\n\n

El cold brew normalment presenta un color m\u00e9s aigualit, no t\u00e9 crema i l’olor sembla m\u00e9s subtil. Es tracta d’un caf\u00e8 amb molts matisos, on l’amargor i l’acidesa s\u00f3n molt redu\u00efdes. Tamb\u00e9 \u00e9s un preparat molt adient crear receptes estiuenques. Acompanyat de llet o t\u00f2nica amb gel, \u00e9s una beguda molt fresca<\/strong> i perfecte per combatre la calor.<\/p>\n\n\n\n

Tot i les seves difer\u00e8ncies amb altres maneres d’extreure caf\u00e8, el cold brew t\u00e9 un sabor intens i complex que s’ha de degustar pausadament. \u00c9s una beguda que ve molt de gust els dies d’estiu, per\u00f2 que no us enganyi, t\u00e9 for\u00e7a m\u00e9s cafe\u00efna que un caf\u00e8 corrent, perqu\u00e8 a major temps d’infusi\u00f3, m\u00e9s cafe\u00efna alliberada.<\/p>\n\n\n\n

Recepta de cold brew mojito<\/strong><\/h2>\n\n\n\n

Hi ha una \u00e0mplia varietat de receptes amb cold brew que podeu trobar i, fins i tot, us podeu atrevir a crear les vostres pr\u00f2pies variants. Per\u00f2 per a totes elles necessitareu la recepta base. Prepara’l seguint la f\u00f3rmula 100 g de caf\u00e8 per 1000 g d’aigua i els seg\u00fcents passos. El nostre suggeriment per a aquesta preparaci\u00f3 \u00e9s el caf\u00e8 de Costa Rica filtre<\/mark><\/em><\/strong><\/a>.<\/p>\n\n\n\n

1. Incorporem 100 g de caf\u00e8 i 1000 g d’aigua al tanc i barregem.
2. Tapem el tanc i el deixem macerar entre 12 i 24 hores.
3. Transcorregut el temps necessari, filtrem la barreja directament a la gerra.
4. Refredem a la nevera.
5. Una vegada fred, el dilu\u00efm amb aigua (tamb\u00e9 es pot fer amb llet o liquat) en proporci\u00f3 1\/2 o 1\/3, segons la intensitat que volem.<\/p>\n\n\n\n

Un cop llest el cold brew, necessitareu els seg\u00fcents ingredients per al c\u00f2ctel<\/strong>:<\/p>\n\n\n\n

\u2022 Gel pil\u00e9
\u2022 35 ml de cold brew
\u2022 15 ml d’infusi\u00f3 (te verd, cardamom i canyella)
\u2022 18 ml d’alm\u00edvar de canyella i vainilla
\u2022 5 ml de taronja espremuda<\/p>\n\n\n\n

Incorpora els ingredients al recipient que m\u00e9s t\u2019agradi, seguint aquest ordre, i decora-ho amb menta i una rodella de pela de taronja.<\/p>\n\n\n\n
